‘Herbs On A Sponge Cake’ is a 15-year-old from distillery 2, fully matured in a 1st-fill ex-Bourbon barrel. It was released in Australia in April 2023, with a total outturn of 141 bottles. Light and delicate whiskies always pique my interest (even more so when they have some age). They often go under the radar; I think perhaps some people misunderstand and think it will lack flavour, but that’s not the case.
Nose
Soft and floral, very delicate along with herb notes and fresh fruits. There’s also a slight olive oil note coming through.
Taste
Finger buns, green apples, honey and very light notes of tropical fruits. Herbal and a bit spicy on the finish.
Conclusion
A light, delicate and floral dram. Refreshing and a good daytime whisky. I enjoyed a fair amount of this while on a short beach break in Cowaramup, WA (as pictured above). I thought this one was a tad overpriced though.
